
SERVES 4
6 tablespoons butter
1 bunch rosemary
3 yams (about the size of a baby’s head)
pinch of salt and pepper
Preheat the oven to 400 degrees.
Prick holes in the skin of the yams. Put them in the oven for an hour or so. Some people use this time to chop the rosemary or pray or sneak over to a friend’s house and hide in the closet, smelling clothes on the hangers. Others will sit and stare at the oven thinking about what a mess they’ve made of things.
When the yams have softened, scoop out the warm insides and transfer to a bowl.
Mash, adding the butter, rosemary, and salt and pepper. Careful not to over-mash, and don’t covet another woman’s husband just because he listens when you talk. And don’t use the word trapped if you can get away but you choose not to.
Serve warm alongside turkey or ham or roast beef.
